Being from northern Minnesota, where it is winter more often than it is not, I love good comfort food. Often this translates into “served hot and involving a lot of butter”. I also have potatoes we harvested from our garden last fall to use up, so I am always trying out new ideas for them. This potato side is a dish I threw together last Sunday to go with our chicken dinner I threw together since a snow storm was upon us. I find a homemade, classic meal is always so comforting and cozy on a Sunday evening, and even more so when it is snowing. The potatoes were a hit with my kids and went well with the chicken, sourdough biscuits, and carrots from our garden.

Assemble Butter Parmesan Ranch Potatoes
I used my small, simple slow cooker for the recipe since we were home, and I didn’t need a timer for it. Oil or grease the slow cooker insert to prevent sticking. Peel and dice about 3 cups of your preferred potatoes into one-inch cubes. You can leave the peels on as well. I used a mix of red and gold potatoes from our garden. Dump the diced potatoes into the slow cooker insert. Slice 3 TB of butter and add to the slow cooker. Add in 3 TB ranch seasoning and 2 TB grated parmesan. Stir to coat the potatoes in the dressing and parmesan.

Set slow cooker to high heat and let cook for about two hours, then turn down to low heat for an hour. You could also cook these on low for 5-6 hours. Timing will depend on how small you dice your potatoes and your slow cooker. They are done when a fork can easily slide through a potato – don’t overcook or they will get mushy. Serve as a side to your favorite meal or use as an appetizer or snack buffet item.

Slow Cooker Butter Parmesan Ranch Potatoes
Serves 5 (as a side dish)
Ingredients
3 cups diced potatoes of choice
3 TB of butter
3 TB ranch seasoning
2 TB grated parmesan cheese
Directions
Oil or grease the slow cooker insert to prevent sticking
Peel and dice potatoes; add to slow cooker
Cut up butter; add on top of potatoes
Add ranch seasoning and parmesan on top of potatoes. Mix to coat potatoes.
Cook on high for two hours and low for one hour; check for doneness.
